Ingredients
1 cup brown rice crispy cereal
1/2 cup gluten-free rolled oats
1/2 cup goji berries (or dried cherries)
1 scoop PlantFusion Unflavored
2 tablespoons sesame seeds, plus 2 tablespoons for dusting
1/3 cup almond butter (or peanut butter)
1/3 cup brown rice syrup
2 tablespoons coconut oil
1 teaspoon vanilla extract
Directions:
*Makes about 8 bars

In a large bowl, mix together the first 5 dry ingredients and set aside.

In a small saucepan, heat up the remaining ingredients over a low flame and whisk until almond butter is dissolved (about 2 minutes).

Remove from flame and let cool slightly. Pour over the dry ingredients.

When mixture is cool to the touch, use a spatula and your hands and start mixing all the ingredients together.

Dampen hands with water as needed and make sure everything is incorporated well.

Roll mixture into 2-inch size balls in the palms of your hands, then run hands together back and forth to form a log.

Press log flat to form a bar.

Place sesame seeds on a plate and dip the top half of the bar in the sesame seeds to coat.

Lay seed-side up on a platter and continue with the rest of mixture.

Keep in airtight container for up to 3 days.
