Ingredients:
(Makes one sheet pan)
- 2 cups unsweetened coconut yogurt (or Greek-style plant-based yogurt)
- 1 scoop PlantFusion Vanilla Complete Protein
- 2 tablespoons maple syrup or honey (optional, to taste)
- ¾ cup chopped fresh strawberries (or mixed berries)
- 2 tablespoons mini dairy-free chocolate chips
Optional toppings:
- Crushed pistachios or almonds
- Shredded coconut
- Swirl of nut butter
- Blueberries, raspberries, sliced bananas
Directions:

Mix the base.
In a medium bowl, whisk together the yogurt, PlantFusion Complete Protein, and maple syrup until smooth and creamy. The protein thickens it a bit, making it perfect for bark. -
Spread it out.
Line a baking sheet with parchment paper. Pour the yogurt mixture onto the sheet and spread it evenly into a ¼–½ inch thick rectangle. -
Sprinkle and swirl.
Top with chopped berries and chocolate chips. If you’re adding nut butter, swirl it in with a toothpick or the tip of a knife. Don’t overthink it—rustic is part of the charm. -
Freeze until firm.
Place the tray in the freezer for at least 3 hours, or until the bark is completely set. -
Break and snack.
Once frozen, use your hands to break the bark into pieces. Store in a freezer-safe container or bag and snack straight from the freezer.
